Our Si Señor version of this Oaxacan original, we replaced the bacon with Chorizo sauteed with Chicken and Angus steak strips, onion, peppers, mushrooms and pineapple bits, topped with melted Jack cheese and served in a hot fajita skillet with a side plate of rice, beans, guacamole, sour cream, pico de gallo and warm tortillas on the side.
